This is not a joke. You can eat well (3 meals a day plus a snack) and even "green" for a really small amount. Before you say you can't eat "green" know that the prices for the green meals for within the North Carolina food Stamp guidlines. I bet you can make it work atleast finacially.

It does prove though that you CAN exist on what food stamps gives you per person per month without eatting crap or running out of $$ at the end of the month. A good shopper can probabbly spend even less than is listed and can then add in some meat products gotten on sale or markdown. It sure is healthier than what the Hillbilly Housewife suggests for her budget menues!

Wow toast and peanut butter with tea for breakfast not much to start the day on! I need to get a menu going really soon. I am sick of not knowing what I am making!

I actually LOVE the Hillbilly Housewife! I dont follow her menus, but some of her recipes are awesome! They are plain, but we have tweaked them to our tastes. Many of her recipes are in our recipe rotation!

the very first recipe I tried was the beginners bread...and I had never made bread from scratch...even in a bread machine...and it turned out PERFECTLY. My mom was like "how in the hell did you make bread on your first time perfectly and I havent been able to make a good loaf of bread in 30 years?" haha!

Our favorite recipe is Toad in a Hole, but I cant seem to find it on her website anymore Sad Good thing I have it memorized!!!

1 pound sausage(we use hot sausage, yes Jonny eats it lol)
2 cups flour
2 1/4 cups milk
2 eggs
1/4 tsp salt(we use garlic salt)

that is what was called for in the original recipe. we added these:

Ground Pepper
5 mozz cheese sticks
1 can corn
I cup frozen cauliflower, thawed and cut into bite sized pieces
Spike Seasoning(no salt added version)


brown sausage in a skillet, drain. Place in 9x9 pan. In a large bowl, mix flour, milk, eggs, seasonings. On top of sausage, layer corn, then cauliflower, then cheese sticks, cut into chunks. Pour mixture in bowl over the sausage veggies and cheese. Bake in a preheated 425 degree oven for about 45 min or so. The top of the bread will puff up and be like a popover, and will be golden brown. I have a skillet that is oven safe, so I just brown the sausage, drain, then layer everything over the sausage in it. One less dish to wash lol!



Actually now that I look at it, several recipes are gone! Im gonna have to contact her and see whats going on!

I don't care for her recipes but I LOVE her blog! She's a total hoot and I'm not sure why but I just find the stuff she's writes really interesting.

I agree with all of you...these menus are way to sparse you would not get enough nutrition and be starving. We actually are vegetarians but even we don't skimp on food like that lol! She isn't even using all the food groups. I think she has the right idea but that is just way to little to be feeding growing kids. Idk if this will help anyone but I buy the last day of sale bakery breads/rolls at my grocery store and put in the freezer. They are $1 usually....you can't make it yourself for that cheap! I stuff them with a soy chicken/veggie cheese cream type mixture for a lot of lunches/dinners during the week. You could use real meat Smile

You may be able to find some new recipes on the "green" site I posted in the first post. I am pretty sure none use meat.

Thanks for pointing that out MrsBPS I did not see the recipes link at all! I printed 6 recipes to try! I do have zucchini coming out of my garden right now and there is a lot of recipes for it ! I was thinking I would have to process some for the freezer but maybe I can use it all up now!

anyone have a cheap menue for a family of 9 lol..I sure could use one..I need major help here..Im limited on income with foodstamps..If anyone has any knowledge of a real site for large families on a budget I would appreciate it

Bless you heart! You are an amazing woman!

Here's what I suggest:
Take your monthly food budget and divide it into 4 weeks. Then go shopping every two weeks for staples and then swing by the store when you need to p/u milk, bread, fruits, veggies (perishables) etc.

Take your two-week budget and subtract baby food, breakfast, lunches, and juices, (non-dinner items)

Divide the remaining amount by 14...that lets you know what you can spend on each meal. I found that if you are at the store less often you are less likely to spend money on frivelous things..plus you save time! Always plan your meals, make a list, and stick to it!

Here are some easy large meals:

*Slow Cooker Roast Beef, potatoes, carrots with 1 pkg. Au Jus Mix, 1/2c water (cook on low 8-10 hours) EASY and great for a busy day!
Add BBQ sauce to left-overs to make BBQ sandwiches
Or add it with some mozarella cheese to skillet and heat for sandwiches

*Roasted Whole Turkey, Mashed Potatoes, Stove-Top Stuffing
Use turkey left-overs for sandwhiches (turkey salad sandwiches!)

*Beef Stew and Cornbread Jiffy Cornbread mix= $0.44!
1 pkg Beef tips
1 BIG can of tomoato juice
Any veggies you have (canned, fresh, frozen)
Sprinkle with shreaded cheddar cheese before serving

I am a southern girl, so I hope this helps somewhat!

for cheap meals I use alot of eggs & my newest one is biscuits & gravy my kids love these!!!
