Easy Chicken Divan:
Put boneless chicken pieces in a casserole dish. Mix in a can of cream of anything soup (optional) or add a little water so it won't dry out and burn. Open up a bag or two of Steamfresh broccoli in cheese sauce and put it ontop of the chicken. You can top with breadcrumbs if you want. Cover and bake in oven until chicken is done. ( 350 degrees for maybe 1 - 1 1/2 hours?) |

I havent made this but my aunt has been telling me to try it, she raved on and on about it...
She took chicken breast, tenderized them and covered them in mustard and then made breaded them with crushed French's onions and baked till done...
Chicken fried rice is really simple also...

Jumbo Krispies Oven-Fried Chicken Nuggets
2 boneless skinless chicken breast
2 cups Kellogg's Jumbo Multi-Grain Krispies Cereal
2 eggs
6 tbsp flour
Preheat oven to 400 (F). Cut chicken breasts into bite size pieces and create an assembly line: 4 tablespoons of flour plated, beaten eggs and crushed cereal with 2 tablespoon flour added. Dredge chicken in flour, dip in beaten egg, coat in cereal-flour mixture then transfer to a non-stick foil lined baking sheet and bake for 10-15 minutes. |

Here's a TNT from Cooking Light (I usually make a little extra sauce). It's also pretty quick and easy.
To assure the chicken gets done, use breasts on the small side, about 4 to 5 ounces each. Serve with polenta or orzo to absorb the sauce.
Sauteed Chicken Breasts with Balsamic Vinegar Pan Sauce
Yield: 4 servings (serving size: 1 breast and 2 tablespoons sauce)
Ingredients
1/2 cup fat-free, less-sodium chicken broth
1/2 cup balsamic vinegar
2 teaspoons honey
1 tablespoon butter
1 tablespoon vegetable oil
4 (5-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup all-purpose flour
2 tablespoons finely chopped shallots
Chopped parsley (optional)
Preparation
Combine broth, vinegar, and honey.
Melt butter and oil in a large nonstick skillet over low heat.
While butter melts, sprinkle chicken with salt and pepper. Place flour in a shallow dish. Dredge chicken in flour; shake off excess flour.
Increase heat to medium-high; heat 2 minutes or until the butter turns golden brown. Add chicken to pan; cook 4 minutes on each side or until golden brown. Remove chicken from pan; keep warm. Add shallots, and sauté 30 seconds. Add the broth mixture, scraping to loosen browned bits. Bring to a boil, and cook until reduced to 1/2 cup (about 3 minutes). Serve sauce over chicken. Garnish with chopped parsley, if desired. |
