I have some lovely bonelss, skinless chiken to use and I need a new recipe idea.
Here are my restrictions:
NO dairy products at all (no cheese, no, cream of ? soup, etc)
NO tomato sauce
NO crock pot
No grill (GF or outside) available right now
NO peppers (ground pepper is fine)
I prefer a tried and true idea. Any yummy suggestions? It will be for all adults, so it need not be "kid friendly" |

| sautee onions in olive oil. add chopped garlic(about 2-3 cloves). add cubed chicken and sautee until done. add 1 can of black beans(drained), 1can whole kernel corn(drained), 1 jar of salsa. simmer for @ least 15 minutes. you can serve it over brown rice or eat with fritos (scoops or regular). this is sooooooooooo good! |

mmmm sounds good except for the beans, I forgot to add in no beans.
anyone else????? |

| I like to marinate my chicken in a mixture of italian dressing and mustard adn then just cook on the stove and serve with rice and a veggie. Ia lso like to make a chicken salad, I boil the chicken and then shred it and add mayo, green onion, tomato, any veggie you want sometimes I a a can of mixed veggies or cucumber, really and combination you like and we eat it on tostadas. |

sounds weird but is really good...
Sweet and sour chicken:
equal parts of:
1/2 bottle small bottle- catalina/Russian dressing red kind (not creamy orange) Wishbone red russian is my favorite.
apricot or orange jelly/preserves
then add a packet of dry lipton onion soup mix
mix well- pour over 3-4 good sized boneless chicken breasts (can tweek the amount of sauce and # of chicken)
Bake in 350 oven for 1 hour
comes out tender & sweet
I serve with rice and veggie and pour over extra sauce
always a favorite in our house. |

My mom used to make this! She even had a really funny name for it...not a nice one either! YUMMY recipe!!! Thanks! I still can not look through her old, used often cook books and I had forgotten about this. You would think after 11 years i could, I just can't.

This is not for company, this is for an every day meal here!
They did LOVE what I made tonight though. here is the origional recipe...I changed the brand of coating mix to Kraft Oven Fry (I forget why now) and the nuts to cashews and it was AMAZING! So, so juicy! My teen would like the dipping sauce to have more punch though...any suggestions?

I deal and they deal and it all works out! Hmmm cajun seasoning might be good, i have to see if he is into that at all.
They dod give me the ok for the sweat and sour chicken posted earlier. So I got the stuff to make the sauce today and forgot to buy noodles! Oh well, that will be anothe rtrip. i got apricot all fruit to use...I am looking forwards to this!

is butter considered a dairy product? if it is im sure u know how u can replace it
but i do this...cut 4 or 5 chicken breast into nuggets
put 2 sticks of butter in a frying pan with 2 whole
cloves of garlic...cook that on med heat for about 5 mins
then add the chicken breast and cook till golden brown
serve over white rice
really easy and fast hope this helps  |

butter is made from milk (you can even make it at home, my mom used to make it with her kindergarten students!!) but I can use margerine.
The recipe sounds yummy, thanks!

Not only did I forget to get a bag of egg noodles (my 1st noodle choice) I got the wrong colour French Dressing! That is the bad news. The good news is I have a box of farfelle (bow ties) I bought by mistake so that will be the noodles and I got the proper colour French Dressing today. We should have this one night this weekk, unless I do yet another menu change! If that happens I will make it next week.
Before shopping today I made an basic menu for the week so I knew exactly what I needed to buy. I wanted to make sure I had enough sides and veggies. Well once we got to the store and I saw there was a sale on their store made (and very yummy) fried chicken, I switched things around. It is ok, we just have more stuff for entrees for NEXT week! |

I made (my version) of this Friday night and it was SO GOOD! THANKS! When I opened the oven to take it out to serve, it smelled just like it did when my mom made it.
I used the following for the sauce:
one 8 oz bottle of Kens (red) Country French Dressing with Honey
almost all, but not quite a jar of Sorrel Ridge Apricot Fruit Spread
1 packet of Liptons Onion Soup mix
The sauce was so yummy, not too sweet, but good! I had wished it had a bit more of a tangy taste. i attribute that to the use of only one packet of soup mix (I should have used two) and a differant brand of soup mix. I don't like the Liptons in dip, too mellow) but I had it on hand so I used it up.
I served the chickn on one platter another of egg noodles, that way everyone could control the amount of sauce. SO GOOD! We will do this again! |

Lately we have been doing this a lot but using the grill. Do you still not have a grill?
I got the Weber grill marinades and there is a tomato basil one that I used when we had penne with marinara and it was great.
Otherwise we marinade the chicken, cook it and then serve with one or more:
salad
corn on the cob
Bush's grillin beans
pasta salad
veggie kabobs
garlic bread
veggie
I also enjoy it barbecued. My mom has a great Drunk chicken recipe I will try to find for ya.
Drunk Chicken
.... Wash the pieces and put in large cont., Pour 1 Bottle of Beer over and let marinade overnight. Place in pan and bake on 325* for
30 min. Pour Sweet Baby Rays BBQ Sauce over pieces
and don’t be chincy!! Put on grill for approx. 15 min.
(Do Not Burn as it will become dry) UMMMMM Good!!
If you dont have access to a grill you could still finish this in the oven. It is wonderful! |

Oh drunk chciken sounds yummy! Thanks! I now have a grill pan (no place for an outside grill and no access to the GF) Infact I have a Paula Dean grill pan...ohhhhhhhhhhhh! Act impressed if ya want! I saw a great deal on one so I have an actual piece of Paulad Dean cookware AND a baking sheet that came with a silicon bake sheet too! Gotta love Ollies (a close out store that is super hit or miss!) I may have to try some grill recipes now too. |

Ingredients:
4 boneless, skinless chicken breast halves
1 teaspoon lemon pepper
1 teaspoon salt
1 teaspoon dried dill weed 1 teaspoon garlic powder
3 tablespoons butter
1/2 cup whipping cream
2 tablespoons capers, drained and rinsed
Directions:
1. Season chicken breasts with lemon pepper, salt, dill weed, and garlic powder.
2. Melt butter in a large skillet over medium heat. Place breasts in skillet, and increase heat to medium-high. Turn chicken frequently, until brown, about 5 minutes. Reduce heat to medium, and cook 5 to 7 minutes, until breasts are cooked through. Remove chicken to a warm serving platter, and cover with foil.
3. Return skillet to stove, and increase heat to high. Whisk in whipping cream, whisking continuously until reduced to sauce consistency, about 3 minutes. Remove from heat. Stir in capers. Pour sauce over chicken, and serve. |

chicken stir fry
Ingredients:
4 (4 ounce) boneless skinless chicken breast
halves
3 tablespoons cornstarch
2 tablespoons soy sauce
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
3 tablespoons cooking oil, divided 2 cups broccoli florets
1 cup sliced celery (1/2 inch pieces)
1 cup thinly sliced carrots
1 small onion, cut into wedges
1 cup water
1 teaspoon chicken bouillon granules
Directions:
1. Cut chicken into 1/2-in. strips; place in a resealable plastic bag. Add cornstarch and toss to coat. Combine soy sauce, ginger and garlic powder; add to bag and shake well. Refrigerate for 30 minutes.
2. In a large skillet or wok, heat 2 tablespoons of oil; stir-fry chicken until no longer pink, about 3-5 minutes. Remove and keep warm. Add remaining oil; stir- fry broccoli, celery, carrots and onion for 4-5 minutes or until crisp-tender. Add water and bouillon. Return chicken to pan. Cook and stir until thickened and bubbly. |

1 tablespoon grated fresh ginger root
1 tablespoon ground black pepper 1 tablespoon dried oregano
1 teaspoon crushed red pepper flakes
(optional)
1 teaspoon ground cayenne pepper (optional
)
1 teaspoon ground paprika (optional)
5 pounds skinless chicken thighs
Directions:
1. Whisk together the soy sauce, brown sugar, water, garlic, onion, ginger, black pepper, oregano, red pepper flakes, cayenne pepper, and paprika in a large glass or ceramic bowl. Add the chicken thighs, and toss to evenly coat. Cover the bowl with plastic wrap, and marinate the chicken in the refrigerator for at least 1 hour.
2. Preheat an outdoor grill for medium heat, and lightly oil the grate.
