| The teen asked for me to make some cold foods for meals. Besides the typical sandwhiches and salad plates does anyone have any ideas for atleast a main dish? |

| Does he eat raw veggies like broccoli, cauliflower, etc? I have a recipe for a vegetarian pizza aka veggie bites. It also has cream cheese on it. lmk if you want the recipe and I'll post it. |

Unroll canned pillsbury crescent rolls onto a cookie sheet. Flatten out and crimp edges together to form a solid crust. Bake until golden.
Mix together cream cheese and half that amount of mayo and mix in powdered Hidden Valley Ranch. (in other words, if you use 1 cup cream cheese, use 1/2 cup mayo.)
Spread cream cheese mixture onto cooled crust.
Top with cut up veggies. I use fresh mushrooms, cauliflower, broccolli, tomatoes, onions, and shredded carrots.
Finish with finely shredded cheese of your choice. I use the already bagged colby jack/cheddar bicolored stuff. I have sometimes just used cheddar.
Chill, cut, and enjoy.
It's one of my favorite things to eat. |

If I wouldn't eat the whole thing right away, it would stay for a couple of days.
The spread is not watery at all. The consistancy is just like softened cream cheese.
The powdered Hidden Valley mix will also help absorb some liquid and stiffen it up a little.
The crust is cooked first. I like mine thin and nice golden brown so it's not easy for it to penetrate through. |

Thanks Donna but I will have to keep looking. I mentioned this to my husband but he got a sad look on his face and just shook his head no when I mentioned the CRESCENT ROLLS of all things! Seems as if the ex wife made these like every darn night when they were together and he had more than his fill. Sadly this is also the case with green bean cassarole, excpet that only showed up about 3-4 nights a week!  |

| I know you said not the typical sandwich/salad type and this kind of is, but what about pitas with hummus and cold veggies like lettuce, cucumbers, tomatoes etc. with gazpacho <-- I've never actually tried this myself but my sister eats it all the time. |

I LOVE hummas, but no one else does. I am not sure any of us would eat gazpacho, I know I won't. Other cold soups might be a consideration though. Maybe.

What about pasta salads??
I mix pasta with a pesto sauce and add in some grilled chicken, tomatoes and fresh mozzarella.. Yumm!!! |

I made a pasta salad Saturday night for dinner. The teen did not care for it, though my husband and I did. GRRRR! I am trying another version later this week.
Version that is NOT teen friendly:
cheese tortollini
fresh mushrooms (about a pound and a half, cut into chunks)
bottled (yellow with stuff floating in it) Italian dressing
faux crab tenders
parm cheese
I cooked the tortollini, chilled them, cut up the crab and mushrooms, tossed them all together, added the dressing and sprinkled liberaly with the cheese, mixed well and chilled again. I would have added chopped red, green and even yellow and orange bell peppers for colour and crunch, but if I had, it would have all wound up on the side of the plates.
The complaint from the teen was that the dressing was too strong. Whatever.
The other vesion I will try later this week:
cheese tortollini
sour cream
mayo
Old Bay Seasoning
faux crab tenders
(maybe fresh mushrooms if I have any)
If I didn't have such picky eatters I would also add in celery or various coloured bell pepper pieces for colour and crunch, but I can't.
I will use equal amounts of sour cream and mayo to make a dressing for the chunked up crab (like a seafood salad) and then add in Old Bay to taste. I will then mis this with chilled (cooked) cheese tortollis. It will be yummy, I mean it is when I make it with plain pasta, the cheese tortollini will be even better IMO!

Could you try this recipe with the pizza crust that is refrigerated. IF you are worried that he will think it is still the crescent rolls you could show him the pizza crust tube. |

Judy, saw this in Woman's Day mag and thought of you...
sushi salad--10minutes
Microwave a 10oz bag frozen steam fresh rice as package directs. Put rice in a large bowl, cover and freeze 5 minutes to quick chill. Meanwhile, slice half a seedless cucumber, 4 scallions and 6 radishes; toss with rice mixture and 6oz bite size pieces imitation crabmeat; 1 cup thawed, shelled edamame; 1 cup shredded carrot and 1/3 cup bottled Asian salad dressing.
I know they say to use imitation crabmeat, but you could probably use real if you wanted. |
