Beans & rice (I just make the rice normal, add black beans or what you have on hand, top with salsa)
Fried rice (rice with seasoning for fried rice, add in leftover veggies)
sloppy joes (just meat & sauce and buns)
I probably have a few others. Those are just our staple cheap meals

tuna noodles
mix tuna (one or two cans, both are fine)
one or two cans of cream of mushroom soup
half as much milk as soup
pound of pasta (cooked)*
soy sauce
mix the first four ingresidents in the pot you cooked the pasta (it is just easier to mix in a big pot) then pour soy sauce on to of the mixture and mix well (should change the colour of the soup)
place in an oven safe bowl and bake at 350 for about 35-40 minutes or until hot and bubbly and if desired crunchy on top
if you have leftovers it is GREAT nuked the next day for lunch
this should be enough for everyone for one meal, considering you have some younger children, you coudl double it if needed
*if you use THIN pasta (like angel hair) it will go MUCH further!!! This is a great way to strech your $$ and the meal.
chopstick tuna
(the original recipe calls for 4 servings, I doubled most of it, the recipe below relects the changes it should be enough for the family I hope)
2 cans (10 1/2 ounces) condensed cream of mushroom soup
1/2 cup water
2 cups chow mein noodles (one small can)
1/2 cup chopped onion
Dash of pepper
2 cans (6 1/2 to 7 ounces) tuna, drained and flaked
2 cups sliced celery (can be chopped up in a mini chopper)
Preparation:
In a large bowl combine soup and water; add chow mein noodles, onion, pepper, tuna and celery; toss lightly. Turn mixture into oven safe dish or bowl. Bake in 375° oven 30 minutes - 40 minutes until nice and bubbly on top. Serve over white rice.
Note; this is really yummy but does not look so pretty. |

spaghetti is always an inexpensive meal. make your own sauce and that cuts it down even lower. you have so many options for cheap meals though. it really does not have to be limited.
bean burritos
chicken pot pie
breakfast
egg salad
meatloaf
soup
salmon patties
the list could on and on really. all of the above can be done homemade on a budget. you can make most meals to fit a tight budet. buy a cheaper cut of meat to do a roast. use leftovers for bbq sammies. when you make a pot of beans for supper. use the leftovers to make bean burritos. seriously , the options are numerous. you can adapt most recipes to fit your budget. have fun getting creative and coming up with yummy meals. |

Meatless spaghetti
Pork n Beans with cut up hot dogs in it
Bean soup - get a package of dried pinto beans and cook them to make soup. Serve with Jiffy Mix corn bread. The next day boil the leftover beans down and make refriend beans and make burritos.
Cut up a few slices of bacon and fry until crisp. Add cooked noodles to the pan. You can even add cut up cabbage and cook until wilted but firm. (It's really good. It just sounds horrible. LOL)
In a pot add ground beef, canned green beans, cut up potatoes, and a little water. Cook all until the ground beef and potatoes are done. (This was my favorite meal when I was growing up.)
Cooked noodles with butter (and you can add parmasan cheese if you have it.)
French toast and fried eggs.
Ramen noodles and add some veggies into it while it's cooking.
Fried chicken livers. Wash and drain. Shake in flour and fry at a med/high heat until the outsides are almost getting crispy. (Love these.)
Hamburgers and red gravy. Make tiny hamburgers made of burger, onions, small torn pieces of bread or cracker crumbs. Fry slowly. Remove from skillet. (You may have to discard some of the grease if there's too much left in the skillet.) Add sliced onions and turn heat up to med. When onions are almost transparent, squirt in a lot of ketchup and some water. Bring to a boil. Add hamburgers back into skillet.
Hamburgers with mushroom gravy. Same as above but add cream of mushroom soup to skillet instead of ketchup and onions.
Milk gravy. Fry small pieces of bacon or sausage until done. Discard some of the oil if there's too much left in the skillet. Add some flour and stir for a few minutes. Add milk and some water to the pan and stir like crazy to get the lumps worked out and cook to boiling. It will thicken even after it's done. Serve over bread.
Snacks:
For a salty snack, buy a bag of popcorn kernels and make it the old fashioned way on the stove top in a pan.
If the kids eat yogurt, buy the big container rather than the small one serving size ones.
Graham cracker sandwhich type cookies filled with a home made icing of powdered sugar, butter, and a little milk. |

I've actually used a few of these recipes and they were good. I've heard a lot of people talk about the Bubble Pizza. |
