How do you go about freezing corn that was just picked??? I would like to freeze the corn on the cob  |

| I'm hoping mine rows ebough to freeze. I plan on blanching it and freezing it right on the cob. Just dip it for a few seconds into boiling water (until the color brightens up a bit) and then dip it into ice water. Dry it off and freeze it on a cookie sheet with parchment paper for an hour or 2. (So it won't all stick together) Then transfer it into freezer bags. |

| I was wondering the same thing! Thanks for the tip. My neighbor just gave us all this sweet corn and being it's just the two of us, it'll never get eaten in one sitting. |

It would at my house. LOL My son is eating corn on the cob like crazy. I make him plenty and then when he sees what is supposed to be mine, he thinks I made more for him. I ended up buying Green Giant frozen corn on the cob. I think they blanche it before freezing. |

Another tip. After it's cool but before you bag it to freeze, dry it off as much as possible! Less water means less chance of freezer burn.
I use old kitchen towels. Lay them on the counter, and "sandwich" the corn between two towels. |

When I have fresh corn that still have the shucks on it. I just put them straight into a gallon size freezer bags and put the straight into the freezer.
When you get ready to use them just take them out, shuck, take tassels off, and put in the pot of on the grill! Works great for me! |

My dad does this & I started..... Off the stalk & into the freezer! Seems like the less you mess with it, the better
