here is how I do mine
STUFFED GREEN PEPPERS
2 to 3 cans tomato sauce (Small Cans)
1/2 c. chopped onion
1 clove garlic, minced
1 1/2 lbs. ground beef
1 c. grated cheese
1 1/2 c. cooked rice
1/4 tsp. salt
1/4 tsp Pepper
6 med. green peppers
8oz package of shredded mozzarella
Start buy cutting the tops off the peppers and partially boiling them.
Partially cook the rice as it will expand while baking and you don't want the peppers to explode.
Preheat oven to 350 degrees
Mix all the ingredients together (using enough tomato sauce to keep it moist about a can to a can and a 1/2) fill peppers with stuffing. Pour remaining tomato sauce in the bottom of the pan (so the peppers don't stick) and over the peppers, top with mozzarella cheese. Cover with Foil (to prevent from drying out and remove it the last 10 minutes to melt cheese on top.
Bake approx. 40 to 60 minutes depending on how large your peppers are and how much you partially cook them before hand. Basically bake until the meat and peppers are done. |

My recipe is much like this one, except instead of the canned tomatoes, I use a large can of tomato soup with a few tablespoons of brown sugar. |
