I took DD shopping and encouraged her to pick out some vegetables since she doesn't seem to eat the ones I like to eat and make (broccoli, spinach)
So she picked an eggplant.
I have never cooked one and am not much on eating them except parmigian style every once in a while. What doesn't taste good deep fried and covered in sauce and cheese?
I am looking for a kid friendly eggplant recipe if any body has one - would be especially nice if it were not too complicated!!
She also picked zucchini and yellow squash so if those could be in the recipe too would be fabulous!! |

You could make vegetarian lasagna with those. I'm a veggie and use those often. I will try and look through my recipes and see if I can find something although I mostly go off what I think sounds good  |

This is what I wound up making. Used eggplant, baby carrots, zucchini and yellow squash for the veggies. The girls didn't like it but I thought it came out great.
Honey Glazed Roasted Vegetables
Red potatoes, onions, zucchini, carrots, red peppers, sweet potatoes, and eggplant roasted 30 minutes and brushed with a honey, balsamic vinegar and garlic mixture.
Ingredients -
1/4 cup Honey
1/4 cup Olive Oil
3 tablespoons Balsamic Vinegar
1 Garlic Clove, peeled and crushed
Salt, Pepper, and Dried Thyme, to taste
4-6 cups mixed halved Red Potatoes, sliced Zucchini, thickly sliced Onions, Red Peppers, Carrots, Sweet Potatoes, sliced Eggplant
Preparation:
1. Preheat oven to 400 F.
2. Combine honey, olive oil, balsamic vinegar, crushed garlic, salt, pepper, and thyme in small bowl.
3. Mix well.
4. Arrange red potatoes, zucchini, onions, red peppers, carrots, sweet potatoes, and eggplant in roasting pan.
5. Brush honey mixture over vegetables.
6. Bake 30 minutes. Stir occasionally. |

not healthy but REALLY yummy...fried egg plant!
peel it and then slice it into disk (like thick bologna width)
mix:
flour, eggs, and milk to a consistancy thats not super runny but easy to dip in and it sticks to the egg plant...
Fry in a skillet with some grease...

LOL yep thats how I make mine down here in Ms too!
I also peel cut up in chucks and boil till tender, drain well add to big bowl salt/pepper add sharp cheese,can of mushroom soup, mix well pour in greesed dish, crush ritz crackers and spread on yop and bake till bubbly, sooooooooooooooooooo good!
