I do different versions of chili all the time. Why can't you just add the chicken as is from the can? As long as you cook all the other ingredients prior and add the chicken the last couple of minutes to keep it from getting tough (it's already cooked in the can).

I made turkey chili a few weeks ago, it was very yummy and I had leftovers to freeze.

WHITE CHILLI

1-Medium white onion (diced)
2-4 oz cans chopped green chilli's
2 tsp garlic powder
2 tsp-cumin
1 tsp-oregano
1 1/2 tsp -cayenne pepper or chilli pepper
1/2 tsp-salt
2 Tbsp- vegetable oil

Saute above ingredients until transparent.
Then place in a 3 quart pot or crockpot and add the following:

2- large cans of chicken breast
1 can condensed cheese soup
3-cans of Great white northern beans (drained)
1-14 oz can of chicken broth
1- 10 oz or larger of diced tomatoes with garlic and onion

Cook for 30 minutes and then add 16 ounces of sour cream and 3 cups of shredded montery jack cheese and continue to cook an additional 30 minutes. Top with Chilli Fritoes or eat plain.
for smaller amount, just cut the ingredient amount in half
