6 baked sweet potatoes, mashed
1/2 cup kentucky bourbon whiskey or 1/2 cup orange juice
2 eggs beaten
1/2 cup butter melted
1 c brown sugar
1/4 tsp cinnamon
pinch of nutmeg
Topping
1 cup pecans chopped
1/2 cup brown sugar
Preheat oven to 350*. Combine all ingredients in large mixing bowl except topping. Be sure the sweet potatoes are mashed well. Pour mixture into a baking dish. Combine pecans and brown sugar and sprinkle on top bake 30-45 minutes. Serves 6-8 |

We started eating mashed Sweet Potatoes, Sweet Tater Fries a few yrs ago - They're actually pretty good! (ESPECIALLY THE FRIES!! ) |

I make this every year only I use eggnog instead of whiskey/OJ. Gives it a great flavor. I also only use the egg whites and I whip them to stiff peaks before I add them to the sweet potato mixture. Makes it light and fluffy.
Yummy...think I'm going to have some leftover right now! |
