FRENCH ONION SOUP (CROCK POT RECIPE)
4 tbsp. butter
4 Large Spanish Onions
Beef Base or bullion
Couple pinches fresh Thyme
1 Bay Leaf
¼ tsp Ground Black Pepper
2 Quarts Beef Broth
1 Can Beef Consume
1/2 soup can sherry or 1/4 c. dry vermouth or white wine (optional)
1/2 soup can Worcestershire sauce
2 tbsp. flour
Baugette
Gruyere cheese
In a skillet, melt butter and sauté onions with 1/8 tsp beef base or bullion, one at a time, until lightly brown. Add 1/8 tsp sugar after 10 min, then continue cooking over med/med high heat 30 min until onions are briwn, but not burned.
Put all ingredients into a crockpot and cook on low all day or on high 5 hours.
(You can omit this if you don’t have time) Put crock pot in refrigerator overnight to bring flavors out. All fat will come to the top overnight – Spoon this off & plug crockpot back in. Cook only a few hours on low. If you cook it too long, onions get mushy.
Cut a toasted bagette (I use day old bread marked down from the store) into slices the size of the soup bowls.
Spoon out soup into oven safe bowls. Top with baguette and plenty of grated Gruyere cheese.
Bake at 450 degrees for 10 minutes (until cheese melts, then broil until cheese is slightly browned and bubbling.
