| Does anyone here happen to make fudge? Years ago before my grandmother passed away she used to make me fudge all the time. I have tried a million times and just cant make it. I knwo this is a little weird but can anyone give me any pointers or maybe even make me some? I know many people mail it and I would gladly pay the mailing cost and the ingredient cost. Its just after I lost my grandfather last week I seem to be looking for something to remember them both by and I remember how much he loved her fudge as well. I am sorry for the off topic post. you can't go wrong with this easy recipe.
1 12 oz bag of chocolate chips
1 can of sweetened condensed milk
1 tsp of vanilla flavoring
put chips and milk in a bowl. microwave for 3 minutes. add 1 tsp of vanilla flavoring and stir. pour fudge on a foil covered pan. put in refrigerator for at least 2 hours. lift foil out of pan and cut fudge into squares. very yummy!

Microwave Fudge
This microwave fudge recipe can be quickly made when you're in the mood for a great treat.
Ingredients:
2 cups chocolate chips
14 oz. can sweetened condensed milk
1 1/4 cup chopped nuts
1 teaspoon pure vanilla extract
1. Mix chocolate chips with milk on 50% power 3 to 5 minutes, stirring once.
2. Stir in nuts and vanilla.
3. Put into a 8 x 8 greased baking pan. Cool and cut into squares.
Yield: 2 lbs
I found this on Allrecipes.com, I think. Pretty much same as the one above just uses nuts. Cut into bite-size pieces for most flavor!
I made about 20 different kinds of fudge last Christmas (8 months pregnant and in the kitchen for 3 days BTW) and by FAR this was the easiest, and I think also the tasiest! Also any kinds that use White choc chips or butterscotch chips will be made in the micro and come out GREAT (orange tastes like a creamsicle, key lime fudge, butterscotch, etc).
Almost all the kinds I made came out OK but many I would never make again because of the crazy amount of work and so-so result. If you are going to expirement with fudge, buy lots of extra ingredients because it's a trial thing and you will likely end up throwing some of it away. Make sure you have a good timer (digital is best), and above all a GOOD candy thermometer. Use wax paper to line the cooling dishes and you will have no clean-up mess and they are easier to turn onto a cutting board to slice up! Use a heavy butcher's knife or other non-serrated large knife so you can cut through the thick fudge quickly and with as minimal work as possible. I got those throw away Tupperware-like containers and they worked like a charm! Use wax paper between layers. Also they freeze VERY well! We ate the last of them early this summer and they were just as good!

Condolences to you and your family on the passing of your grandfather. Your message touched me, as I found myself in a similar situation many years back.
I was a five-hour drive away from Mom and Dad's home when I heard of the passing of my grandmother. Since siblings, aunts and cousins were a couple of days away, I needed to do something immediately, before I made the drive to my folks house. I decided on making her fudge - we had made it together when I was very small - basically the same recipe that uses 1 can sweetened condensed milk and 1 pkg morsels, in a double boiler. When melted, add a teaspoon of vanilla, and a pinch of salt and remove from heat. Chopped peanuts, walnuts, almonds, mini marshmallows, raisins, trail mix, whatever, can be added just before you put in in the pan to cool in the fridge. I have sometimes doubled the recipe (two separate double boilers) to make it thicker in a 9x13 pan.
I remember using the wooden spoon set I bought her from a school class trip fundraiser when I was 8 - when she went in the nursing home and sold her house it was my only inheritence from her, I cherish the most of all my kitchen equipment.
When the vanilla hits the hot melted morsels, the alcohol burns off, the mixture gets extra smooth and creamy and the kitchen will smell like grandmas's house. The sense of smell is a powerful reminder of fond memories, I hope you can find some comfort in this, I know I did. I brought the fudge to the reception following the funeral, and several aunts and cousins all shared similar memories and commented how Grandma would have appreciated it.
I'll be making fudge this weekend for a Halloween party - just after the fudge is in the pan and is starting to cool, I place a piece of candy corn on top about an inch apart so I know where to cut each piece of fudge. This is really fun to make, the kids can help with this part, and it's a hit at school parties, office parties, anywhere. Cutting them into very small pieces like this will tempt even the calorie conscious. Chocolate soothes the soul. |
