I already eat rice everyday but would love a good Mexican Rice Recipe

Brown 1 1/2 cups white rice in 2TBSP oil{vegetable or olive}

Boil 3/4 cup water +3/4 cup salsa together in pan.Stir in brown rice.Cover and let sit for 5 minutes or until ready to use.

I make alot of rice-my hubby is mexican.

Saute 1 diced onion, 1 diced green pepper, 1 clove of garlic, 1 celery stalk and 1 cup of rice in oil until the rice is lightly browned.

Add 2 cups of chicken broth, 1 tablespoon of cumin and 1 can of rotel.

Bring it to a rolling boil for 2 minutes and cut the heat down to low.

After 20 minutes fluff the rice and eat! Yummy!
