This soup is so good (and easy)...you just have to try it! I usually double the recipe and my boyfriend and I eat it for days - we never get sick of the stuff.
2 garlic cloves, minced (or use dried minced garlic)
1 tsp butter
2 cans reduced-sodium chicken broth
1/2 c. water
1/3 cup minced fresh basil (or use just a lil bit of the dried stuff)
1/4 tsp pepper
2 1/2 cups frozen cheese tortellini
1 can (19 oz) white kidney or cannellini beans, rinsed and drained
2 tablespoons balsalmic vinegar
1/4 c. shredded parmesan cheese
In large saucepan, saute garlic in butter until tender. Stir in the broth, water, basil and pepper. Bring to a boil. Stir in tortellini . Reduce heat; simmer uncovered until tortellini begins to float. Stir in beans and vinegar and heat through. Sprinkle with the parmesan cheese.
1 1/4 c. equals 284 calories 8g fat. |
