Does anyone have a good recipe for Ramen noodles? My MIL gave us a whole load of them, and I don't know how I can make a variety of dishes.
She gave me a couple of chicken recipes, but not sure how often my Hubby can stand to eat it. Thanks for any suggestions! |

i used to cook this for my younger siblings!
1 pkg ramen noodles cooked and drained (leave seasoning out)
2-3 eggs
it was simple and it tasted like egg drop soup without soup!!!
put the noodles back in the pan and throw in the seasoning to taste with a little water just to get the noodles coated.
add 2-3 beaten eggs and stir until cooked through. my sis loved this and still makes it for herself to this day! |

Thank you all for your suggestions! I really do appreciate it. I shared these with my MIL and she was really surprised at how versatile those little inexpensive packages of noodles are.....she jokingly asked for them back! My husband wanted me to post this recipe that he and his roommate made many moons ago....
2 packages of Ramen noodles
1 bag of crushed Doritos
Cook noodles according to package; drain a little.
Add doritos and eat!
Not exactly exquisite cuisine, but sure did fit their budget and stomachs at the time. |

The same thing happened to me and then i came across this recipe!
easy chicken stir fry (for one of those days)
1 tablespoon vegetable oil
1 pound boneless, skinless chicken breasts, cut into strips
2 1/2 cups water
1 package (3 ounces) chicken-flavor instant ramen noodles
1 bag (16 ounces) frozen vegetable mixture (such as broccoli, carrots and water chestnuts)
1/4 cup bottled stir-fry sauce (any flavor)
Heat oil in a large skillet over medium-high heat. Cook chicken until browned, about 8 minutes.
Meanwhile, bring water to a boil in a large, non-stick saucepan. Add noodles (reserving the seasoning packet) and vegetables. Cook 3 minutes. Drain. Return mixture to pot over medium-low heat. Add chicken, stir-fry sauce and contents of seasoning packet. Heat through. |

I had this a few years ago at a picnic, and loved it so much I begged for the recipe. Since then, I've taken it to picnics and everyone raves about it! I've devised a reduced fat version (see the applesauce in place of some of the oil).
Enjoy!
Broccoli Crunch Salad
In a medium bowl, combine the following:
3 scallions, chopped
1/3 cup light olive oil (LOW FAT VERSION: Substitute 1 small plastic
cup of unflavored applesauce and 2 Tablespoons olive oil)
4 Tbsps. Sugar
4 Tbsps Balsamic Vinegar
Dry flavor packet from Chicken Ramen Noodles (use dry, do NOT add water)
In a small skillet, brown the following in 1 Tbsp. Butter, stirring often:
1½ cups sliced almonds
1/3 cup sesame seeds
In large bowl, combine
1 package Broccoli Slaw (in the prepared salads aisle in the grocery
store. If you can’t find, substitute tiny broccoli florets)
Ramen chicken noodles, dry, crushed finely (just use plain Chicken
Flavor, nothing else)
Just before serving, toss in browned nuts/seeds and dressing. Toss to coat. Enjoy! |

| On a cookie sheet, I break up the noodles bite size, do not use the seasoning, and then on top of the noodles, cut up 3 Tblsp of butter. Put them in oven and broil them until golden brown. I use these instead of croutons on my salads. They are yummy and addictive! You can just snack on them if you want, or add them to your favorite snack mix. |
