Here's a recipe for all the upcoming zucchini we need to use up!

2 c. flour
1 1/4 c. sugar
1 1/2 tsp. baking soda
1/2 c. oil
1/2 tsp. salt
1/2 c. cocoa
2 tsp. vanilla extract
Mix all and add:
2 c. shredded zucchini
2 c. flour (or wheat flour)
Bake 9 x 13 greased pan at 350 for 30 min.

Frosting:
6 Tbsp. cocoa
2 Tbsp. shortening
2 Tbsp. butter
dash of salt
Melt then add:
3 1/2 c. powdered sugar, 1 tsp. vanilla, and 1/4 c. milk
frost over cake.
