They are literally running out of my ears! Give me recipies ladies! I won't be able to can this week or next so give me ideas of ways to eat them up! Canning ideas besides pickles are also welcome!

I hadn't had too many come in yet. I have had like 3 but there are a lot of little ones in the garden!
I think you can make some kind of cucumber salad (like egg salad) and cucumber salsa! Not sure how you do them! Julie |

We are getting a grocery sack full every other day!!!!!!!!!
If you lived closer I would give you some, but I don't think they would ship well! ROFL!!

I used to have a restaurant and we made cucumber salad and everyone liked it.
Cucumber Salad Recipe
1/4 cup sugar
1/2 cup vinegar
1 cup water
salt--to taste
pepper--to taste
cucumbers
bell peppers
onions
tomatoes
I usually use about 3-4 large cucumbers, 1 small bell pepper, 1 small onion, and 1 medium tomato. Cut up all the veggies and put in a medium bowl. Combine sugar, vinegar, water, salt and pepper, and pour over veggies. Stir well. Cover and put in frig for at least 4 hours before serving. It is better if you can let it sit for 8 hours.
This is one of those recipes that you can kind of work with to suit your taste. |

| This is not a recipe, but an idea for anyone who has leftovers that they cannot eat or give away. There is an organization called Plant a Row for the Hungry. They encourage farmers and gardeners to plant an extra row and donate the food to charity. You can donate just about everything. One year, I had an out-of-control herb garden. Let's just say that the poor people of Genesee County had some flavorful soup that year! |
