My dad used to make them when I was little oh how I love these with pinto beans!! In 1992, I canned lots and lots of them and no longer have the recipe to them. I had eaten them up years ago. This year we have quite a bit of squash and I would love to can some pickles with them.
Do anyone have the recipe to make them?
also does anyone have the old style recipe to make sour kraut? (the one where u have to leave it in the churn?) |

Yield: about 4 half pints
2 pounds squash peeled, seeded and cut into 1/2 inch cubes (about 4 med.)
1 1/3 cups sliced onions
1 1/4 cup sugar
1 teaspoon salt
1 tsp, dry mustard
1/2 tsp. turmeric
1/2 tsp ginger
2 cups water
1 cup vinegar
Combine squash and onions, set aside. Combine remaining ingredients in a large saucepot. Bring to a boil. Add squash and onions boil 10 minutes. Pack hot vegetables and liquid into hot jars, leaving 1/4 inch headspace. Remove air bubbles. Adjust 2 piece caps. Process in a boiling water canner!

The Ball Blue Book ROCKS!! I am pretty sure this is the book Julie is talking about. It is $4-5 at Walmart and has every kind of canning recipie you can imagine!!

Yes, this is the book that I have! It's so nice! Like you said lot of canning recipies in there! Worth the money! Julie |
